Baked Oatmeal at Camp T

I’d like to introduce you to Camp Timberline in Estes Park, Colorado.

Camp T is the big God dream of Dana and Bill Darrough.

It’s a Christian sports & mountain adventure camp nestled at the base of Longs Peak in the Rocky Mountain National Park. Everywhere you walk, you see touches of Dana’s artistic genius and God’s Word.

Pretty sure this stairwell is my favorite. I love the practical application of the verse.

Of course God’s genius abounds too. Everywhere you look, you see sights like this.

So this Labor Day weekend, they invited Will and me to come speak at their Family Camp. We met loads of fabulous families as well as the camp staff – amazing college and post-college kids without boundless energy and love for God. But the other treat was eating the deeee-lish camp food. Yes, that’s what I said … scrumptious camp food. One of my favorites was the Baked Oatmeal. Hot, sweet and perfectly dreamy. Dribble a little cream or milk over this and you’ll think you’re in heaven … since they shared it with me, I had to share it with you. Enjoy!

Camp T’s Baked Oatmeal (bear with me, it’s from memory and they make it in gargantuan batches …)

Preheat oven to 350. Grease a 9 x 13 pan – butter preferred. Mix together 1 1/2 c milk, 2 eggs, 3 T melted butter and 2 t. vanilla. Combine  2 1/2 c. oatmeal (or more depending on desired texture), 1/2 c. brown sugar, 1 t. cinnamon, 2 t. baking powder and scant salt. Mix all together. Put in fridge til ready to bake. When ready for heaven on earth, set in oven and bake about 35 minutes. Dribble with cream. Yum.

Think delicious oatmeal cookie with a cold glass of milk. Or think, I’m a fantastic mom making a hot breakfast for the fam. Maybe even, double this recipe and I don’t have to prep breakfast for a week. Seriously.
