thankful for favorite family recipes :: The Joy Challenge
Today marks the end of The Joy Challenge – thank you for participating, for giving thanks and raising the JOY quotient. I think it made God happy.
And it’s the beginning of Favorite Family Recipes …
In the month of December, among other festive things, I’ll be featuring some fabulous food from some of my favorite families. And there’s no place better to start than in Kristi’s kitchen. I’ve introduced you to Kristi before … she’s an expert at home, at the mall, and in one of my books, I even call her the Sephora Queen. (Check that out and see why … )
But today, it’s in the kitchen. Here’s an easy, delish recipe that’s sure to make everyone happy.
Lemon Chicken Pasta … don’t you love Kristi’s specifics above? At first I fussed at her for not detailing the recipe. But you know what? There’s really no need. You can make it to taste … just like you like it. And no need to worry about everything being perfect. The recipe works out just fine.
To start, bake chicken breasts in soy sauce til tender. Cut in bite size pieces.
Prepare one package of pasta. Add sliced grape tomatoes.
Add generous amount of lemon juice, grated rind and chopped parsley.
Add salt and pepper to taste. Toss joyfully. (Because it’s going to be so delicious!)
Ta-da!!!
I have made it a half dozen times since testing it in her kitchen. It’s my favorite pack and go lunch or a great healthy snack option. The more you make it, the more you’ll come to realize how much parsley vs. rind vs. lemon. It’s very easy to adjust to taste. Perfecto!
