Cinnamon Swirl Banana Bread
This recipe is so delicious and so easy … I just had to share.
I discovered the recipe via Pinterest ~ the pin lead me to two recipes. One from Lovin’ from the Oven and another at Sandwich Hoss. Both recipes are so similar … and I adapted mine ever so slightly.
The difference between this recipe and my all time favorite banana nut muffin recipe … is the cinnamon sugar in the batter and atop the batter.
After baking, you’ll get a gorgeous sugary crunch just waiting for you.
Followed by a terrific smiley swirl inside. It’s yummy. I had a taste, then chased the rest of the loaf out the door with Sara to share with her Young Life buddies.
Cinnamon Swirl Banana Bread
3 over-ripe bananas * 1/3 c melted butter * 3/4 c sugar * 1 egg, beaten * 1 1/2 t vanilla * 1 t baking soda * dash of salt * 1 1/2 c flour
Swirl topping: 1/4 cup sugar * 1 T cinnamon
Preheat oven to 350 degrees. Coat 9 x 5 pan with shortening. Mash bananas with a fork. Add butter, sugar, egg, and vanilla. Gently, stir in flour, soda and salt.
In separate bowl, combine 1/4 cup sugar and 1 T cinnamon. Add two thirds of the batter to the loaf pan and then sprinkle more than half of the cinnamon/sugar mixture over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
Bake 45-60 minutes. I pulled my loaf out around 55 minutes. Check with a knife to ensure that it’s baked all the way through.
