Maple Syrup Marshmallows
Adding homemade marshmallows to morning coffee is my new favorite treat. Sweet daugher-in-love, Amy, introduced me to maple syrup marshmallows the last time we were in Denver visiting. When we arrived, the grandboys were all enjoying her homemade marshmallows as snacks. She recommended adding them to my coffee. I’ve been doing it ever since.
Just five little ingredients: 1 cup water * 4-5 T gelatin * 3/4 cup maple syrup * 2 t vanilla * pinch of salt
In sauce pan, add 1 cup cool water to a bowl then slowly add gelatin, mixing to make sure gelatin is incorporated. Allow gelatin to bloom. Then move pan to cooktop and turn on medium heat. Add maple syrup, vanilla extract and salt. Mix often. When mixture is translucent, transfer to stand mixer and beat for about 15 minutes or until mixture is light, fluffy and forms peaks.
Then QUICKLY transfer to 9 x 13″ (like this non-stick pan) and using a spatula, smooth marshmallow mixture. You literally have less than a minute before it starts to set.
Pop this in the fridge for an hour or until set. Cut in squares and enjoy in hot cocoa or coffee. :)
