Best Peanut Butter Cookie Recipe
Yesterday, I talked about how the cookie crumbles in marriage.
Today, I will only talk about these delectable peanut butter cookies and how they crumble oh-so-fabulously in your mouth.
Honestly, this is the best peanut butter cookie recipe I have ever tried. I wish I could remember where I found it ~ perhaps Martha ~ but I couldn’t find anything like it on her site. I don’t know the origin but I do know this:
- They smell amazing when you’re baking them. Aroma fills the whole house …
- They are so peanut-buttery that they taste incredibly healthy.
- The dough is guilt-free! Did you hear that? No eggs in this recipe ~ eat away!
- They’re great baked up with a tall glass of milk or unbaked rolled up in tiny pieces and smushed in chocolate ice cream.

Best Peanut Butter Cookies
1 stick butter, softened * 1 c. brown sugar * 1/2 t. vanilla * 1 c. smooth peanut butter * 1 1/2 c. flour * 1 t. baking soda * 1/4 t. salt
Thoroughly mix butter, sugar, peanut butter and vanilla in a bowl with a rubber spatula. Combine flour, baking soda and salt ~ then add to butter mixture. Combine well. Refrigerate dough over night. Roll into 2″ balls, place on cookie sheet and flatten lightly with the palm of your hand. Make criss-cross pattern with fork. Sprinkle with sugar.
Bake in pre-heated oven ~ 350 degrees ~ for 10 minutes. Take out of oven and let sit on cookie sheet for another 5 minutes. Transfer to cooling rack. Makes about 2 dozen cookies.
