Chai Spice Gooey Cake

In my heart, I’m a pie girl. Probably why I have a whole pie category on my site. There’s just something about pie that says home.

But I must admit, if there’s any cake that holds a special place in my heart it’s this recipe. My mom taught me to make Gooey Cake years ago. It tastes a lot like buttermilk pie which is why I probably love it.

Over the years, I’ve experimented with gooey cake recipes but most recently I had an idea to make Chai Spice Gooey Cake. And ohmygracious… the first bite was all goosebumps and glory.

Here’s the recipe.


Chai Spice Gooey Cake

Cake Layer:
1 16 oz package yellow cake mix, without pudding
2 teaspoons Mt Baker Chai Spice Seasoning (from Savory Shop)
2 eggs
1 stick butter, melted

Filling:
1-8 oz package cream cheese, softened
2 eggs
1 teaspoon vanilla
1 box (16 ounces) powdered sugar

Preheat oven to 350. Combine cake mix and spice, incorporating well. Add eggs and melted butter, and mix well. Press mixture into a greased and floured 9 x 12″ pan.

In a separate bowl, beat cream cheese, eggs, and vanilla together until smooth and fluffy. Add powdered sugar and mix well. Spread on top of unbaked cake layer.

Bake about 40 minutes or until golden brown. The centers will still be slightly gooey. Allow to cool before serving.
