Cucumber Sandwich
This is no traditional cucumber sandwich.
Watch out – it’s a Texas-sized cucumber sandwich!
I love cucumbers. Especially when paired with cream cheese and red onions. So I don’t really understand why someone would go to the trouble of making a little-itty-bitty-teeny-tiny cucumber sandwich when you can make a whopping ginormous one.
With this sandwich, you’ll get a big ole bite of cucumber and red onion every time you sink your teeth in … which is kinda the goal. The recipe is so easy.
Cucumber Sandwich
1 large slice of home-style bread * 1/3 of an English cucumber, pared and sliced about 1/2″ thick * sliced red onion * cream cheese * freshly grated pepper * sprinkle of kosher salt
Cut slice of bread in half and spread with cream cheese. Pare and slice cucumber. Slice onion. Place cucumbers on one side of the bread and onions on the other. Generously pepper. Sprinkle with salt. Smash those slices together.
Paired with an ice cold Mexican Coca Cola and a handful of Fritos – and you’ve got yourself a fantabulous summer sandwich.
