Easy Pecan Pie
When my friend, Amy Hannon (of Euna Mae’s), told me she didn’t have a pecan pie recipe she loved … I knew it was time to pull this beauty out. This is a recipe I’ve been making at Thanksgiving and Christmas time for years. It’s an easy, fail-proof pecan pie recipe. Beginner’s delight.
Start by making one recipe of my No-Roll Pie Crust, then prepare the following filling.
Susie’s Easy Pecan Pie Recipe
1 cup light corn syrup * 1/2 cup sugar * 3 Tablespoon flour * 1/2 teaspoon salt * 1/2 teaspoon cinnamon * 1/2 teaspoon vanilla * 2 eggs, lightly beaten * 3 Tablespoon melted butter * 1 cup broken pecans
Preheat oven to 300 degrees. Combine sugar, flour, salt and cinnamon. Add corn syrup, melted butter and eggs. Mix until well incorporated. Fold in pecans. Pour in pastry lined pie pan. Bake on low rack for one hour.
This is absolutely a recipe to make for the first time and take to friends or family over the holidays. And it’s not just for holidays either.
It’s a great pie to make for your church staff peeps … which is what I did today. Kind of a great surprise when someone shows up with a surprise pecan pie. Oh joy!
