Mimi’s Daisy Jewels: Cookie Press Recipe

This cookie recipe is my mom’s recipe. She makes these pressed cookies every Christmas. I don’t know where Christmas would be without Mimi.

And her little ‘daisy jewel’ cookies.

A couple years ago, I asked her to share the recipe with me. And she also bought me a cookie press. But I was intimidated by the press with all it’s options, so I never made the cookies until Mimi showed me how last weekend.

It makes me so happy seeing her hands in all these pictures …and her perfect penmanship on the recipe. (Aren’t you grateful for your mom? Make some cookies together, snap a few photos. :)

Sooo, the recipe is really easy to whip up and they are amazing. A dense, shortbread tasting cookie. Not super sweet ~ and perfect with a cup of coffee. The secret is the rum and cardamon. You’ll love them. And I’m so grateful Mimi wants to share with you. Here’s the recipe!

Mimi’s Daisy Jewels

2 1/2 c flour * 1/2 t cardamom * dash salt * 1 c butter * 1/2 c sugar * 1 egg * 1 t vanilla * 1/2 t rum flavoring

Cream butter and sugar til light and fluffy. Beat in egg, vanilla, and rum flavoring. Add dry ingredients a third at a time, blending well to make a soft dough. Use a sunburst cookie press and press out cookies.

Bake in 350 degree oven for 10 minutes. Don’t over bake! The cookies will not be brown. Remove and cool on rack. Store between wax paper for up to 2 weeks.

PS. We adapted the recipe and bumped up the original call for cardamon, vanilla and rum.

Mine is an Atlas Deluxe Biscuit Maker which has really great reviews on Amazon. After making the dough, you just fill up the steel tube and press out the cookies. The first couple cookies pressed out are a mess. Just scrap them and re-use the dough. (Or eat it. Mimi pointed out the dough is really good. And just to make sure, Emily and I tested it. It’s true. Delish.)

I got so inspired, I tried using my press. My press didn’t have the same daisy/sunburst as Mimi’s but it did have these adorable, tiny cookie kisses.

Not as nostalgic for me but really fun. And gracious whatever the shape, they taste fabulous.

They press out in three’s. And since they’re so tiny, I only baked these for 5 minutes.

Perfect sweet-sized-snack.

And a batch fits oh so nicely in these 10 ounce Weck jars.
